Tahini, tahin, or whatever you prefer to call it. It goes very well with meat dishes or as a dip. What matters most is finding a good sesame paste. Personally, I prefer the regular version, not the whole-grain one.
Ingredients:
- 100 g sesame paste
- 75 ml cold water
- 1 large lemon
- salt
- optional: finely chopped parsley
If the oil in the sesame paste has separated on top, simply stir it well before using — with a spoon or, as I do, with a hand mixer using just one beater.
Gradually pour the cold water into the sesame paste while stirring continuously. At first, the mixture may become thicker instead of thinner — that will change shortly. Once the water is mixed in, season with salt and gradually add the lemon juice to taste. The more water or lemon juice you add, the thinner it becomes.
Optionally, you can add finely chopped parsley at the end. It tastes wonderful!
